Ingredients:

Directions:

  1. Preheat the oven to 325 degrees f.
  2. Line several cookie sheets or rimmed pans with cooking parchment paper
  3. Sift the flour, cocoa powder, baking powder, and salt onto a sheet of waxed paper
  4. In a large mixing bowl, beat the eggs and sugar on moderate speed for 1 minute, using an electric hand mixer
  5. On low speed, beat in the melted butter, melted bittersweet chocolate, melted unsweetened chocolate, and vanilla extract.
  6. Sift the flour mixture over the chocolate mixture and blend it in completely
  7. Stir in the chocolate chips.
  8. The dough will be soft and glossy
  9. Place the bowl of dough in the refrigerator for 15 minutes to chill…..
  10. Place rounded 3- tablespoon-size mounds of dough on the prepared sheets spacing mounds 3 inches apart……
  11. Bake the cookies for 14 to 15 minutes or until just set.
  12. Begin checking the cookies at 13 minutes.
  13. The baked cookies will be soft but stable and will look dry on top
  14. Let cookies stand in the pan for 1 minute then transfer them while still on parchment paper, to cooling racks,
  15. Store in airtight containers
  16. Makes 20 large cookies
