Ingredients:

  • 2 1/4 cups flour
  • 1/2 tsp salt
  • 1-1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/8 tsp cloves
  • 1/3 cup shortening
  • 2/3 cup brown sugar , packed
  • 2 eggs
  • 1/2 cup dark molasses
  • 2/3 cup whole milk
  • 2 cups peeled, cored, diced apples (about 2 medium)
  • 1/2 cups chopped walnuts , pecans , or macadamia nuts (optional)

Directions:

  1. Sift together flour, baking soda, salt, cinnamon, nutmeg and cloves.
  2. In a larg mixing bowl, cream shortening with sugar.
  3. Add eggs, one at a time, beating well after each addition.
  4. Add molasses and mix well. (TIP- if you coat your measuring cup with some non-stick spray before pouring molasses, it won't stick.)
  5. Add flour mixture alternately with milk.
  6. Fold in the apples and nuts.
  7. DO NOT OVER MIX.
  8. Pour mixture into a greased and floured 9x5 loaf pan.
  9. Bake at 350 degrees for 60-70 minutes, depending on your oven.
  10. Cool on rack for 10 minutes.
  11. Remove from pan and cool completely.
  12. Wrap loaf in foil and store overnight before slicing OR help yourself to some right away!
