Marys Favorite Coconut Macaroon Cake

Ingredients:

  • 4 eggs
  • 1 cup buttermilk
  • 2 1/2 cups sugar
  • 1 cup oil
  • 1 large can or half bag of coconut
  • 1 1/2 tsp of coconut flavor
  • do not use a mixer. mix by hand

Directions:

  1. BATTER REMINDER: DO NOT USE A MIXER. MIX BY HAND
  2. BEAT EGGS AND THEN GRADUALLY ADD SUGAR. MIX WELL
  3. ADD MILK, MIX WELL
  4. ADD OIL, MIX WELL
  5. ADD FLOUR A LITTLE AT A TIME AND MIX WELL
  6. ADD COCONUT FLAVOR AND COCONUT, MIX WELL
  7. MAKE SURE ALL INGREDIENTS ARE MIXED REALLY WELL.
  8. POUR INTO A GREASED BUNDT PAN.
  9. BAKE AT 350 DEGREES FOR 45 MINUTES
  10. ICING:
  11. 1/2 CUP WATER
  12. 1 CUP SUGAR
  13. 1 TEASPOON OF COCONUT FLAVOR
  14. BRING TO A BOIL, BOIL FOR ONE MINUTE. SPOON OVER CAKE WHEN DONE
