Maple-Pecan Cinnamon Apple Cake

Ingredients:

Directions:

  1. Preheat oven to 350°F.
  2. Spray a 10-inch tube pan with baking spray; set aside.
  3. Prepare cake:
  4. Combine 2 cups flour, baking powder, baking soda and salt in a small bowl; set aside.
  5. Combine 2/3 cup sugar and margarine in large mixing bowl with an electric mixer on medium high speed; beat until fluffy.
  6. Mix in 2 eggs and 4 tablespoons maple syrup; beat until blended.
  7. Add 1/2 cup sour cream; beat at low speed until well blended.
  8. Gradually add flour mixture; blend well.
  9. Spread batter in prepared pan.
  10. Prepare topping:
  11. Combine brown sugar and cinnamon; sprinkle over batter.
  12. Top with apples.
  13. Place the 2 eggs in medium bowl; beat slightly.
  14. Add pecans, 1/2 cup granulated sugar, 1/2 cup sour cream and 2 tablespoons flour; blend well. Pour over apples.
  15. Bake 60 to 70 minutes or until edges are light golden brown and toothpick inserted in center comes out clean.
  16. Cool 10 minutes.
  17. Gently remove from pan.
  18. Prepare glaze:
  19. Blend cream cheese, confectioners' sugar and remaining 3 tablespoons syrup in small mixing bowl with electric mixer on medium high. Add more syrup to thin glaze, if needed.
  20. Drizzle over warm cake.
