Low Carb Peanut Butter Cookies

Ingredients:

  • 1/2 cup chopped mixed nuts (or whatever you have on hand)
  • 1 cup splenda granular
  • 2 tsp vanilla
  • 4 eggs

Directions:

  1. Preheat oven to 400 Degrees.
  2. Combine peanut butter, splenda, vanilla,and eggs. Mix until well blended and smooth.
  3. Fold in the nuts.
  4. Drop by Spoonfuls on greased cookie sheet.
  5. Bake 8-10 minutes.
  6. Will make about 1 dozen large cookies or 2 dozen small.
