Lovely Lemon Meringue Pie

Ingredients:

  • 3 tbsp cornstarch
  • 1 1/4 cups sugar
  • 1/2 cup lemon juice
  • 1 tbsp lemon rind
  • 1 1/2 cups boiling water
  • 6 tbsp sugar

Directions:

  1. Combine the cornstarch, 1 1/4 of a cup of sugar, lemon juice and lemon rind.
  2. Seperate the eggs and beat the egg yolks. Add to lemon mixture.
  3. In a sauce pan over medium heat, Gradually add boiling water. Heat the mixture to a gentle boil and continue for 4 minutes.
  4. Add the mixture to the pie shell.
  5. FOR MERINGUE: beat the egg whites using a mixer until stiff, then beat in the remaining 6 T of sugar.
  6. Spread the Meringue over the hot pie. Be sure to seal the edges with mergingue.
  7. Bake at 425 degrees in a hot oven for 4-5 minutes or until the tips of the meringue are golden brown.
  8. Let cool and serve cold.
  9. Enjoy!
