Limoncello Bread Pudding

Ingredients:

  • 3/4 cup heavy cream
  • 3/4 cup milk
  • 1/4 cup limoncello (can substitute with 1/4 cup lemon juice and 1/4 cup sugar, heated until sugar is melted)
  • 7 large eggs
  • 2 quarts stale bread
  • 1/4 cup limoncello
  • 1/4 cup sugar

Directions:

  1. Cube bread and place in a 9x9x2 baking dish.
  2. In a mixing bowl, wisk together the Heavy Cream, Milk, Eggs, Sugar, Vanilla Extract, and Limoncello. Pour over bread.
  3. Cover with foil and bake at 350 for 40-50 minutes, or until pudding is set.
  4. In a small sauce pan, bring linomcello and sugar to a boil stirring well to dissolve sugar. Pour over pudding.
  5. Top with one scoop of vanilla ice-cream and fresh mint leaf.
