Lime Almond Cheesecake

Ingredients:

  • 1/4 cup sugar
  • 4 (8 oz) packages cream cheese
  • 1 1/2 cups sugar
  • 1 1/2 tbsp lime juice
  • 1 pinch salt
  • 4 large eggs
  • 2 cups sour cream
  • 1/4 cup sugar

Directions:

  1. Press ground Graham Cracker crumbs into bottom of a 10 spring form pan and a 1/3 of the way up the sides.
  2. In blender, cream the cream cheese and sugar on low.
  3. Add pinch of salt and lime juice, blend.
  4. Add eggs, one at a time, on low, to prevent to much air from getting into batter.
  5. Pour into crust.
  6. Place into pre-heated, 350 degree oven for 45 minutes.
  7. Remove from oven and let stand for 10 minutes.
  8. Mix sour cream, sugar and almond extract, and add to top of cake after 10 minutes has passed.
  9. Place in oven for 10 more minutes.
  10. Remove from oven and immediately place in the refrigerator to prevent cracking.
