Light Sugar Cinnamon Almonds

Ingredients:

  • 3 1/4 cups whole almonds
  • 3/4 cup sugar
  • 3/4 cup splenda granular
  • 3 tbsp cinnamon
  • 1 1/2 tsp vanilla
  • 1/8 tsp salt

Directions:

  1. Preheat oven to 300 degrees.
  2. Line a baking sheet with parchment paper.
  3. In a bowl combine sugar and cinnamon.
  4. In another large bowl beat egg white until slightly frothy.
  5. Stir in vanilla and salt.
  6. Add almonds to egg mixture and toss to coat.
  7. Then pour cinnamon sugar mixture into almonds and toss to coat.
  8. Spread sugar coated almonds on lined baking sheet.
  9. Bake 25 minutes; stir after 10 minutes.
  10. Let cool and remove from pan.
