Directions:

  1. Cream butter and granulated sugar;
  2. Beat in egg and lemon peel or extract.
  3. Stir in sifted dry ingredients, then mix in zucchini and walnuts.
  4. Drop on greased baking sheets;
  5. Bake at 350° for 15 to 20 minutes.
  6. Glaze cooled cookies with the lemon glaze or your favorite glaze or icing.
  7. Makes about 2 to 3 dozen cookies, depending on size.
