Lemon Poppy Seed Bread

Ingredients:

  • 3 eggs
  • 2 1/4 cups sugar
  • 1 1/2 cups milk
  • 1 1/8 cups olive oil
  • 1 1/2 tbsp poppy seeds
  • 1 1/2 tbsp vanilla extract
  • 1 1/2 tbsp almond extract
  • 1 1/2 tbsp lemon extract
  • 3 cups flour
  • 1 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1/4 cup orange juice
  • 1 1/2 tsp vanilla extract
  • 1 1/2 tsp almond extract
  • 1 1/2 tsp lemon extract

Directions:

  1. Mix together the eggs, sugar, milk, oil, poppy seeds, and extracts.
  2. Sift together the flour, salt and baking powder. Add this to the egg mixture.
  3. Mix together 1-2 minutes.
  4. Preheat oven to 350°F
  5. Pour batter into 2 greased bread pans.
  6. Bake 1 hour at 350°F.
  7. Just before it's done, make the glaze. Mix powdered sugar, orange juice and extracts.
  8. Remove loaves from oven.
  9. Pour glaze over loaves while still in the pans.
  10. Cool for 30 minutes, remove from pans and cool on racks.
