Ingredients:

  • 1 1/4 cups sugar, divided
  • 3/4 cup vegetable oil
  • 4 eggs
  • 2 cup flour
  • 1/2 tsp. salt
  • 1 can (15 oz.) lemon pie filling
  • 1 1/2 tsp. cinnamon

Directions:

  1. In a mixing bowl combine 1 cup of sugar and oil; mix well.
  2. Add eggs and beat until light and lemon colored. Combine flour, baking powder, and salt.
  3. Add to the egg mixture and mix well.
  4. Pour half of the batter into a prepared 13X9X2 inch baking dish.
  5. Spread pie filling over the batter. Top with remaining batter.
  6. Combine the cinnamon and remaining 1/4 cup sugar.
  7. Sprinkle sugar mixture over the top of the batter.
  8. Bake at 350 for 30 minutes or until when a toothpick is inserted it comes out clean.
