Lemon Chiffon Pie

Ingredients:

  • 1 1/2 cups graham cracker or gingersnap crumbs
  • 3 tbsp sugar
  • 1 envelope unflavored gelatin
  • 3 packets sweet 'n low
  • 1/8 tsp salt
  • 1/2 cup water

Directions:

  1. Preheat oven to 375 degrees F.
  2. Combine cracker crumbs and margarine; press into bottom and up sides of 9-inch pie plate.
  3. Bake 6 to 8 minutes.
  4. Cool on wire rack.

  6. In small saucepan combine sugar, gelatin, lemon peel, Sweet 'N Low and salt.
  7. Lightly beat egg yolks with water and lemon juice; gradually stir into gelatin mixture.
  8. Cook over low heat, stirring constantly, until slightly thickened, about 10 minutes.
  9. Pour into a large bowl.
  10. Cover and chill until mixture mounds slightly when dropped from a spoon, about 1 1/2 hours.
  11. Beat egg whites until stiff peaks form.
  12. Gently fold into lemon mixture.
  13. Pour into pie crust.
  14. Cover and chill until firm, about 5 hours.
  15. Garnish top with additional grated lemon peel, if desired.
