  1. Beat together butter and sugar until fluffy then add eggs, lemon peel and vanilla.
  2. Beat until fluffy.
  3. Combine flour, baking powder and 1 teaspoon salt.
  4. Add to butter mixture alternately with milk beating after each addition.
  5. Fill paper bake cups in muffin pans half full with batter.
  6. Combine coconut and pecans then sprinkle atop cupcakes pressing lightly into batter.
  7. Bake at 375 for 20 minutes.
