Ingredients:

  • cooking spray
  • 1/4 cup butter or 1/4 cup margarine
  • 1 cup flour
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 2/3 cup sugar
  • 1 large egg
  • 1 large egg white

Directions:

  1. Preheat oven to 350°F.
  2. Coat bottom of an 8-inch square baking pan with cooking spray.
  3. Combine butter and mints in a 2 cup glass container; microwave at high 30 seconds or until soft.
  4. Stir until smooth; set aside.
  5. Combine flour, baking soda, and salt in a bowl, set aside.
  6. Combine sugar, cocoa, egg, and egg white in a large bowl; beat at medium speed until well blended.
  7. Add mint mixture and beat well.
  8. Add flour mixture and beat at low speed just until blended.
  9. Pour batter into pan and bake at 350°F for 20 minutes or until a toothpick inserted in center comes out clean.
  10. Cool completely.
