Ingredients:

  • 1/2 cup chopped onion
  • 1 can (14-1/2 oz) stewed tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 tsp italian seasoning
  • 1 medium zucchini , cut into 1/4-inch slices

Directions:

  1. Cook pasta according to package directions. Meanwhile, in a large skillet, cook pork and onion over medium heat until meat is no longer pink; drain. Add the tomatoes, tomato sauce and Italian seasoning. Bring to a boil. Reduce heat; cover and cook for 5 minutes to allow flavors to blend.
  2. Drain pasta; add to skillet. Stir in zucchini. Cover and cook for 3-5 minutes or until zucchini is crisp-tender. Yield: 5 servings.
