Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Roast chicken in oblong baking dish for 1 hour.
  3. Place potatoes and carrots in saucepan covered in water. Bring to boil, reduce heat and simmer for 20 minutes.
  4. In small saucepan, mix honey, mustard, butter, cayenne, ginger and garlic. Bring to a boil, stirring constantly. Remove from heat and set aside.
  5. Drain drippings from cooked chicken. Arrange vegetables and apples over and around chicken. Drizzle honey mixture over all. Return to oven for 20 minutes or until chicken is thoroughly cooked.
  6. Serve over rice.
