Ingredients:

Directions:

  1. Simmer soy milk for about 10 minutes
  2. Let the temperature settle in between 170-180F
  3. Dissolve 1 teaspoon nigari in a cup of warm water
  4. Slowly pour in 3/4 cup of nigari water, stirring gently
  5. Let rest and stir, looking for milky areas
  6. Pour the remaining 1/4 cup in milky areas
  7. When all has become curds and whey, ladle into cloth lined tofu box
  8. Let drain, cover with cloth, put the top on and let rest for 20 minutes with a 3-5lb weight on top
  9. After 20 minutes you should have about a 2lb. block of fresh tofu.
  10. Store covered in water, changing water daily.
