Homemade Mason Jar Mayonnaise

Ingredients:

  • 1 egg
  • 1/4 tsp salt
  • 1/2 tsp dry mustard
  • 2 tbsp lemon juice
  • 1/2 cup oil
  • 1/4 tsp pepper , optional
  • 1 clove garlic, minced , optional

Directions:

  1. Break the egg into a pint wide-mouth mason jar. Add the salt, mustard and lemon juice. Pour oil on top (don't stir). Immerse a stick blender to the bottom of the jar. Hold on bottom and blend 5-6 seconds until the bottom starts to look creamy and whitish. Move blender up and down slowly until emulsified.
