Homemade Lemon Curd

Ingredients:

  • 50 g butter
  • 1 cup sugar
  • 2 eggs

Directions:

  1. Place juice and zest of both lemons into a metal bowl or double boiler.
  2. Add butter cut into pieces, and sugar.
  3. Heat over pot of simmering water until butter and sugar is melted - do not boil.
  4. Lightly whisk eggs and add to bowl, stirring constantly. DO NOT BOIL, or the egg white will harden and separate - it will still be edible but will not have the ideal smooth texture and doesn't look as appealing!
  5. Continue stirring for about 15min or until thickened. Pour into jar, cool, screw on lid and keep refrigerated.
