Guatemalan Hot Chocolate

Ingredients:

  • 2 oz unsweetened chocolate (2 squares)
  • 2 tbsp water
  • 1/2 cup sugar
  • 1 tbsp cornstarch
  • 1 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 3 cups hot milk

Directions:

  1. Grate the chocolate into top part of a double boiler over boiling water. Add the water until a smooth paste is formed.
  2. Mix sugar and cornstarch. Add to chocolate paste.
  3. Gradually stir in the coffee. Beat until smooth. Cook about 5 minutes, stirring occasionally.
  4. Stir in cinnamon, vanilla, salt, and milk. Blend thoroughly.
  5. Cook mixture for for about 20 minutes, stirring occasionally.
  6. Before serving, beat with rotary beater until frothy.
