Grits with hominy, cheddar and green onions

Ingredients:

  • 3 1/2 cups water
  • 3/4 tsp salt
  • 1 15 oz can white or yellow hominhy, drained
  • 1/3 cup plus 2 tbsp thinly sliced green onions
  • 1/2 tsp pepper

Directions:

  1. Bring water to boil in heavy medium saucepan. Mix in grits and salt and return to boil. Reduce heat and simmer 2 minutes, stirring occasionally. Coarsely chop hominy in processor, using on/off turns. Stir hominy, 1/3 cup onions and pepper into grits. Cover; cook until very thick, stirring often, about 6 minute. Remove from heat. Stir in cheese. Cover; let stand 1 minute. Stir again. Top with 2 tablespoons onions.
