Ingredients:

  • 1 1/2 cups white vinegar
  • 1 1/2 cups water
  • 3 cups sugar
  • 5 sticks cinnamon
  • 1 tbsp whole cloves
  • 1/4 tsp mace
  • 1/4 tsp nutmeg
  • 6 cups green mangoes , 34 large slices uniformly about 1/4 inch thick

Directions:

  1. Combine all except mango and boil 5 minutes.
  2. Add mango and cook for 30-45 minutes or until tender and clear.
  3. Pack mangoes into hot, sterilized jars, add syrup and seal.
  4. Process in boiling water bath for 10 minutes.
