Grandma Josephine's Snickerdoodle Cookies

Ingredients:

  • 2 tsp cream of tarter (no substitutes)
  • 1/2 cup firm butter
  • 2 large eggs
  • 1/2 tsp salt
  • 2 3/4 cup sifted white flour
  • 1 1/2 cup white sugar

Directions:

  1. Whip shortening, butter and sugar until very fluffy (about 4 minutes) then add eggs, whip again until smooth and fluffy.
  2. Sift flour into bowl, sprinkle cream of tarter, soda and salt over flour. Beat with electric mixer until a whipped dough forms.
  3. Chill in fridge for at least one hour.
  4. Mix 1/2 cup sugar with 2 teaspoons of cinnamon, a pinch of nutmeg, and a pinch of ginger.
  5. Take teaspoons of cookie dough, roll into a ball, then roll into the sugar mixture.
  6. Place 2 inches apart on a cookie sheet, I use a baking stone. Gently press with a fork once on top of each cookie ball before baking.
  7. Bake 8-9 minutes in a 400 degree oven in the center rack. Cookies will be golden on the edges. Makes about 60-70 cookies.
