Ingredients:

Directions:

  1. Add your diced onion to a large and deep frying pan and sautee until onions are golden color
  2. Add cubed beef and slowly fry the beef until the beef juices start running, lower the heat and allow the beef to simmer in it's juice. Add a little water once the beef has absorbed it's own juices, add enough water that the beef cubes is slightly covered.
  3. Add black pepper, salt, and tumeric spice. On low heat let the beef stew. Keep an eye on the beef, so that the water doesn't run too low. let is stew for 1 - 1 1/2 hours
  4. Now, in another pan fry with a little oil your FINELY chopped parsley, leeks, and coriander. Stop frying when the herbs are turning a very dark color. Add a pinch of salt. Add the finely chopped fenugreek leaves.
  5. Add the kidney beans to the beef stew, add the fryed herbs to the stew. Add water so that there is a thick stew like consistancy. On low heat let the whole thing stew for 2 - 2.5 hours. Add lime juice half way through the stewing process.
  6. Serve on steamed white rice - and voila!
