Ingredients:

  • 2 lbs. small or medium turnips
  • 2 tbsp. butter
  • 1 tbsp. sugar
  • 1/2 tsp. salt
  • 2 tbsp. minced fresh parsley (optional)

Directions:

  1. Wash, scrub, peel, and quarter turnips.
  2. Arrange pieces in a single layer in a heavy skillet.
  3. Pour in enough water to halfway cover the turnip pieces.
  4. Add butter, sugar, and salt. Bring to a boil, lower the heat to medium, and cover.
  5. Boil for about 10 minutes, stirring occasionally to make sure the turnip cooks evenly.
  6. Remove cover and cook, stirring occasionally, until all the water has evaporated, 5-10 minutes.
  7. Raise the heat to medium-high. Cook the turnips in the skillet, turning occasionally, until coated and golden-brown, about 5 minutes. Add 2-3 tablespoons of water to deglaze the pan, and toss to coat the turnips with the glaze.
  8. Garnish with parsley, if desired, and serve.
