Ingredients:

  1. Combine the rice and ginger rounds in a large saucepan. Add broth and a dash of salt. Bring to a boil, stir; cover and reduce heat to low. Simmer until the rice is tender and the liquid has been absorbed.
  2. Meanwhile, combine the cilantro, green onion and minced ginger in the work bowl of a mini food processor. Add the oils and the vinegar, process until almost smooth. Taste and season with salt and pepper.
  3. When the rice is cooked, stir in the cilantro mixture. Serve.
