Garden Scrambled Eggs

Ingredients:

  • 1 egg
  • 1 tsp. chopped dill
  • 1/4 cup. small dice onion
  • optional: curry powder , cayenne , and as a garnish fresh squeezes of lime juice
  • all fresh from garden if you can....not dried if you can help it

Directions:

  1. Saute onion and zucchini
  2. Add chard, stir occasionally
  3. Stir in herbs quickly and push to side of pan
  4. Crack egg into pan and let cook slowly for a little bit
  5. As it starts to firm up, break it up a little
  6. Finally stir all together until egg is done to your liking
  7. Note: I like my eggs not too scrambled so I like to see some nice yellow yolk
