Ingredients:

  • coconut oil ( liquified , just run the jar under hot water in the sink) *instead of salad oil.
  • 2 eggs and about a 1/2 cup of vanilla yogurt to substitute the egg
  • 4 tsp probably.
  • 1 and 1/2 cups of sugar .
  • 3 eggs
  • 3 cups flour (sometimes i use gluten free )
  • 2 tsp vanilla
  • 1 heaping tsp baking powder
  • 1 heaping tsp baking soda
  • 1 cup chopped nuts (optional) pistachios , almonds walnuts or whatever strikes your fancy
  • 1 cup shredded coconut (also optional)

Directions:

  1. 1) mix oil, eggs, vanilla and sugar
  2. 2) add zucchini to the oil mix
  3. 3) add all dry ingredients
  4. 4) add nuts and shredded coconut
  5. 5) pour mix into 2 loaf pans6) bake at 350 for 1 hour
