Frosted Pineapple Cookies

Ingredients:

  • 1 (8 oz) can crushed pineapple
  • 1 cup brown sugar , packed
  • 1 large egg
  • 1 tsp vanilla
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups powdered sugar

Directions:

  1. Drain pineapple, reserving 3 tbsp juice.
  2. Set pineapple aside.
  3. Set juice aside for frosting.
  4. In a bowl, cream butter and sugar.
  5. Add egg, mix well.
  6. Add pineapple and vanilla, mix well.
  7. Combine flour, baking powder, baking soda, and salt.
  8. Stir into creamed mixture.
  9. Drop by tsp 2 apart on greased cookie sheet.
  10. Bake at 325° for 17-20 minutes.
  11. Remove and cool on wire racks.
  12. Frosting - Combine powdered sugar with just enough reserved juice to get a smooth spread.
  13. Frost cookies when cool.
