Fried Sweet Potatoes

Ingredients:

  • 12 oz sweetpotato (1 very large!)
  • 1 tbsp butter
  • 1/8 cup brown sugar

Directions:

  1. Peel sweet potato and cut in half lengthwise. Slice each half into 1/4-inch slices. In large pot, bring lightly salted water to a boil. Add sweet potato slices and boil for 10 minutes. Immediately drain and set aside.
  2. In large frying pan, over medium high heat, melt butter and add brown sugar. Stir until thoroughly mixed and bubbly. Add sweet potatoes (one layer deep) and fry for 3-4 minutes, then turn and fry until nicely browned, another 3-4 minutes.
  3. Remove potatoes from pan, and serve immediately.
