Directions:

  1. Bring the water and lentils to a boil in a medium pot.
  2. Reduce the heat, cover, and simmer for 45 minutes.
  3. Drain the water and transfer the lentils to a serving bowl. Let cool.
  4. Combine with the vegetables, seasonings, and spices and toss gently.
  5. Serve at room temperature
