  1. Grill eggplant til tender
  2. Lightly coat with sauce, dip into breadcrumbs (add seasonings to crumbs)
  3. Place in oven safe shallow container - sprinkle with cheeses
  4. Bake for 10-15 minutes at 350 until cheese melts and lightly golden
