Easy Spinach Salad

Ingredients:

Directions:

  1. Wash and dry spinach leaves if necessary
  2. Slice the bacon into little bits and cook until crispy, keeping about 4 or 5 tbs of the fat in the pan
  3. Remove the bacon and add the garlic, saute until fragrant.
  4. Whisk in the balsamic vinegar, picking up all the bits from the bottom of the pan, bring to a steady boil and let reduce for 5-10 mins. Season with salt and pepper.
  5. While the bacon is cooking arrange the salad plates by place a great big handful of spinach on each.
  6. Sliced the hard boiled egg into four wedges and place around the plates
  7. Add some grape tomatoes and crutons
  8. Drizzle the hot dressing over the spinach right before serving.
