Easy Coconut Almond Candy

Ingredients:

Directions:

  1. In a large sauce pan, combine coconut, corn syrup, sugar, and salt.
  2. Cook over medium heat stirring constantly....for 5 - 6 minutes or until the candy thickens and coconut is lightly brown
  3. In small bowl... whisk egg white until foamy
  4. Add coconut mixture to the egg white a little at a time and then add to the rest of the coconut mixture..
  5. Stirring constantly cook for 5 - 6 minutes longer or until mixture becomes stiff and very sticky
  6. Remove from heat and add the coconut extract
  7. Cool to room temperature
  8. Dip fingers into cold water and shape candy into 1-inch balls
  9. Place on waxed paper and press 1 almond on top of each
  10. Refrigerate for one hour or until firm
  11. Melt the chocolate bark in a small saucepan..
  12. Dip candy into the chocolate and return to the waxed paper
  13. Cool completely
  14. Store at room temperature...
  15. Makes approx. 24
