Delightful Pickled Nasturtium Seeds

Ingredients:

  • 6 tbsp salt
  • 2 cups small ripe green nasturtium buds (about)
  • 1 large mace
  • 1/4 cup sugar

Directions:

  1. Dissolve salt in 4 cups water.
  2. Soak nasturtium seeds in the mixture for 2 days.
  3. Drain and rinse with cold water.
  4. Cover with fresh cold water and let stand for 1 day.
  5. Drain very well and pack into hot sterilized jars.
  6. Boil remaining ingredients together for 10 minutes.
  7. Pour over seeds.
  8. Cool slightly and seal.
  9. Let stand for 3 months before using.
  10. These resemble capers and can be substituted for them.
  11. Makes about three 1/2 pint jars.
