Crustless Crab Quiche With Spring Vegetables

Ingredients:

Directions:

  1. Heat oven to 400.
  2. Coat a quiche dish with nonstick cooking spray.
  3. Reserve 1/4 cup of hazelnuts for garnish.
  4. Layer crab, 1/2 cup nuts, cheese and vegetables in baking dish.
  5. In separate mixing bowl whisk together eggs and milk until incorporated.
  6. Batter will be somewhat lumpy.
  7. Pour over layered ingredients in baking dish.
  8. Bake 40 minutes or until golden brown.
  9. Allow to stand 5 minutes before serving.
  10. Blanch reserved asparagus for 8 minutes in uncovered pot.
  11. Drain on paper towels.
  12. When quiche is removed from oven garnish with asparagus.
  13. Sprinkle hazelnuts over all.
  14. To give asparagus a shiny appearance brush very lightly with vegetable oil.
