Creamy Asparagus Soup

Ingredients:

  • 1 tsp. olive oil
  • 1 tsp. sugar
  • 1 medium onion
  • 1 medium potato
  • 1 lb. asparagus
  • 2 garlic cloves
  • 3 1/2 cup. vegetable broth
  • 1 salt to taste

Directions:

  1. Wash and cut asparagus into 2 inch pieces.
  2. Thinly slice the onion.
  3. Peel and cut potato into 2 inch pieces.
  4. Chop the garlic.
  5. Heat oil in soup pot. Add the onion and sugar and cook slowly over low heat to carmelize the onion.
  6. After onions are carmelized add remainder of ingredients.
  7. Simmer until all ingredients are tender.
  8. Pour into food processor and process until smooth. If the soup is a little stringy put soup through a fine sieve or colander and strain.
