  1. Wash chickens with cold water inside and out. Place on rack Breast side up over shallow baking pan. Salt and Pepper cavities and place half of lemon in each cavity. Soften butter in bowl till almost melted (10 Seconds in microwave) Brush or rub butter all over chickens. Drizzle half of the olive oil (1/4 cup) over each chicken. Salt and pepper outside of chickens. Drizzle two Tablespoons each of minced garlic over each chicken. Shake or crumble about a teaspoon of fresh or dried parsley over each chicken. Dust very lightly with red pepper-no more than 1/4 teaspoon over each chicken. Tie up chicken legs (truss) Bake at 375 for 1 hour or until leg juices run clear. Brush off loose minced garlic from each chicken. Let rest 10 minutes, remove trussing string and serve.
