Cornbread & Sausage Wheel

Ingredients:

  • 1 cup flour
  • 1/2 tsp salt
  • 1 egg
  • 1 cup milk
  • 2 tbsp sausage drippings

Directions:

  1. Preheat overn to 425 degrees.
  2. Brown sausage links in oven-proof skillet (cast iron works best) over low heat on top of stove.
  3. Drain fat, reserving 2 tablespoons.
  4. Arrange browned links in pan, so that they look like spokes of a wheel.
  5. Sift together flour, salt, baking powder and corn meal in a medium bowl.
  6. Make a well in the center and add egg, milk and the reserved 2 tablespoons of drippings.
  7. Beat by hand until smooth, making sure not to over mix.
  8. Fold in chopped onions.
  9. Pour mixture evenly over suasage links.
  10. Bake at 425 degrees for 20 minutes or until tester comes out clean.
  11. To serve, invert onto plate or platter.
  12. Cut into wedges, keeping the sausage link in the center of the wedge.
