Ingredients:

Directions:

  1. Line lamington pan with plastic wrap.
  2. Place 250g biscuits in processor and process to fine crumbs.
  3. Add butter and press mixture into pan.
  4. Chill for 30 minutes.
  5. Sprinkle gelatine with 1/4 cup warm water. Stir until gelatine dissolves.
  6. Place cream cheese, cream, vanilla, caster sugar in electric mixer and beat until smooth. Add gelatine and melted white chocolate.
  7. Add remaining roughly chopped biscuits and stir to combine.
  8. Pour over chilled base.
  9. Cover with plastic wrap and chill overnight.
  10. Drizzle with melted dark chocolate.
