Ingredients:

Directions:

  1. Wipe chicken with clean damp cloth.
  2. Combine the 1/4 cup flour, 1 teaspoon salt and pepper.
  3. Roll chicken in mixture.
  4. In large skillet brown chicken in oil on all sides.
  5. Remove chicken from the pan and drain on paper towels.
  6. Heat oven to 350.
  7. In a bowl mix together remaining flour, baking powder and salt.
  8. Beat together eggs, milk and melted butter.
  9. Beat until light.
  10. Slowly add to flour mixture.
  11. Beat until batter is smooth.
  12. Pour batter into greased 12x7-inch baking dish.
  13. Arrange chicken pieces on top.
  14. Sprinkle with pepper if desired.
  15. Bake for 1 hour or until batter puffs and is golden brown.
  16. Serve at once.
