Coconut Caramel Oat Cookies

Ingredients:

  • 1/2 cup. butter or margarine
  • 1/2 cup. milk
  • 1 cup. sugar
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 3 cup. quick oats

Directions:

  1. In saucepan, bring butter, milk and sugar to a boil.
  2. Add vanilla and salt.
  3. Cook for 1 minute.
  4. Add caramels and stir until melted, about 4 minutes.
  5. Remove from heat and stir in coconut and oats.
  6. Drop by heaping tablespoons onto waxed paper.
  7. Let stand until set.
  8. Yields approximately 3 dozen.
