Cinnamon and Spice Poultry Brine

Ingredients:

  • 1 tbsp allspice
  • 1 tbsp cayenne
  • 1 tbsp clove
  • 1 tbsp black pepper
  • 1 tbsp mace
  • 1 tbsp cardamom
  • 5 cinnamon sticks
  • 1 cup packed brown sugar
  • 1/2 cup kosher salt
  • 3 cups water

Directions:

  1. Bring whole mixture to a full boil,remove from heat and cool to room temperature.
  2. Place poltury in brine and refrigerate for at least 24 hours, but a few days is better.
  3. Roast,grill or smoke it's up to you.
