Chocolate Marshmallow Mousse

Ingredients:

  • 2 cups sugar
  • 3/4 cup water
  • 1/2 tbsp cornflour
  • 1/2 cup water
  • 2 heaped tbsp gelatine
  • 1 cup milk
  • 250 ml fresh cream

Directions:

  1. Melt the chocolate and milk together in a double boiler until smooth
  2. Allow to cool slightly,set aside
  3. Boil the sugar and water together in a thick based pot on med. heat until a thick and bubbly syrup is formed +- 5 mins /105*C on a sugar thermometer
  4. In a seperate dish mix tog the cornflour,water and gelatine until smooth
  5. Add the hot syrup to the gelatine mixture gradually,using an electric mixer ,beat for about 10 mins /until thick and sticky
  6. Add the melted choc and the whipped cream to the marshmallow mix and beat until well combined
  7. Pour into glass bowls quickly and allow to set
  8. Decorate with fresh cream rosettes,choc curls and stawberry fans
