  1. In a saucepan, bring the chicken broth to a boil. Slowly stir in the bulgur. Reduce the flame to low, cover the pan, and cook until the broth is absorbed, about 15 minutes. Transfer the bulgur to a large bowl to cool.
  2. Meanwhile, in a small bowl, combine the lemon juice, lemon zest, olive oil, salt, and pepper. Add the chicken and toss well. Set the mixture aside.
  3. In a large bowl, combine the parsley, green onion, tomato, and cucumber. Add the cooled bulgur and chicken with dressing. Toss the mixture well to combine. Serve in pita halves.
