Directions:

  1. Heat the butter in a large size sauce pan over medium heat. Sauté the celery and the onion for approximately 3 minutes and then add the bell pepper. Cook it for another minute.
  2. Next, stir in the flour a little at a time until it is blended in with the vegetable mixture. Add the chicken broth in and stir in to blend.
  3. Add your diced up potato and bring all to a boil. Then reduce the heat and cover the mixture and simmer it for approximately 15 minutes or until the potato is slightly tender.
  4. Add the asparagus and the cooked chicken and cook until the asparagus can easily be pierced by a knife or fork.
  5. Add the cream and the salt and pepper.
  6. Stir in the parsley.
  7. Serve immediately and enjoy with salad, bread or a sandwich. Delicious!
