Ingredients:

Directions:

  1. Unfold one thawed sheet of puff pastry dough on a sheet of clear plastic wrap or waxed paper.
  2. Dice the four tomatoes into small pieces(I usually slice the tomato in half and slightly squeeze the tomato before I dice it so that it isn't too juicy. That's up to you.).
  3. Put the diced tomatoes into a medium sized mixing bowl.
  4. Tear the 8 basil leaves into small pieces and add them to the same bowl.
  5. Add the remaining ingredients to the same bowl.
  6. Using a spoon, mix all the ingredients together.
  7. Spread the mixture on the puff pastry dough making sure it is even and to the edges.
  8. Choose the edge closest to you and roll the dough up so that it is in one tight roll.
  9. Seal the long edge by pressing.
  10. Chill in the refrigerator for about 15 minutes (You do not have to do this. I just find it's easier to slice and easier to prepare ahead of time and have ready to slice and cook whenever I am.).
  11. When ready to cook, just slice the roll into 1/2 inch slices and place them on a parchment lined cookie sheet.
  12. Cook in a 425 degree oven for 15 minutes.
