Chamomile-Ginger Iced Tea

Ingredients:

  • 8 cups water
  • 6 tbsp honey
  • 2 tbsp fresh lemon juice (about 2 lemons)
  • 4 (2-inch-long) strips lemon rind
  • ice
  • lemon wedges (optional)

Directions:

  1. Bring 8 cups water to a boil in a 3-quart saucepan. Remove pan from heat; add honey and next 4 ingredients (through lemon rind). Steep 1 hour and 30 minutes.
  2. Pour tea mixture through a sieve into a pitcher; discard solids. Cover and refrigerate until thoroughly chilled. Serve over ice, and garnish with lemon wedges, if desired.
