Ingredients:

Directions:

  1. CAKE:
  2. Grease loaf pan, dust lightly with flour, tap out excess.
  3. Combine oil, sugar, eggs and vanilla in large bowl;
  4. Sift flour, baking soda, cinnamon and salt onto wax paper, add to sugar mixture;
  5. Stir in carrots & nuts; mix JUST until blended;
  6. Turn into prepared pan.
  7. Bake at 350 for 1 hour or until center springs back when pressed.
  8. Cool in pan.
  9. When cool, poke holes in cake with a fork and also slide a knife or spatula around edges to get the cake away from the side of the pan.
  10. Drizzle glaze evenly over, making sure it gets down the sides too.
  11. GLAZE:
  12. Combine first 3 glaze ingredients;
  13. Add vanilla and stir well.
